This cocktail riffs on a punchy martini and lets the few ingredients used speak for themselves. Rather than tasting of olive brine, if you make it subtly with this gin then the rosemary and the citrus olive flavour come together really nicely with that salty brine.
20mls Fino Sherry
15mls Olive Brine
One small green olive
Muddle olive then shake and strain all ingredients in to a nick & nora glass. Garnish with a Gordal Olive.
