Old Tom Collins
Where our London Dry works wonderfully in the modernised recipe of this classic cocktail, our Old Tom takes it back to it's original, glorious form. Memorialised by Jerry Thomas in 1876, as the name suggests, it was indeed made with Old Tom. Much debate surrounds this drink and it's origins but we do know that it is one of the earliest cocktails on record and standing the test of time, theres good reason it is still popular. Simply put, it is just absolutely delicious.
Ingredients:
35ml Portobello Road Old Tom
15ml Lemon Juice
15ml Sugar Syrup
100ml Soda Water
Method:
Fill a tall glass with ice. Add the ingredients and slowly mix with a long bar spoon so not to disturb the effervescence. Finally, garnish with a lemon slice and a cherry.
